Asparagus is arguably one of the most versatile vegetables out there. Bacon-wrapped asparagus, cream of asparagus soup, and simple, oven-roasted asparagus are just a few of the many routes you can take with these crispy green spears. If you want to get the most out of the spring veggie, though, you’ll need to know the proper way to store asparagus to make it last as long as possible.

If you’re at the store or farmers market and pick up a large bunch of fresh asparagus, you might be tempted to simply place them in one of the drawers in your fridge. The longer asparagus sits in the fridge, though, the more the ends are going to dry out, resulting in more to trim off and less to eat. Here is the best way to extend the life of your asparagus and keep it from drying out.

How to Properly Store Asparagus

Start with fresh asparagus from the market. The fresher the better! Storing asparagus is quite similar to keeping herbs or flowers fresh. Keep the rubber band on to hold the bunch together, and trim an inch off the ends of the asparagus. Stand the asparagus up in a glass or jar with about an inch or two of water, making sure all the ends are sitting in the water. A 2-cup measuring cup is a great container for storing asparagus. Loosely cover the asparagus with a plastic bag and store in the refrigerator for up to a week. If the water looks cloudy, just change it as needed.
