This Creamy Lemon Herbed Chicken Is a Weeknight Favorite

All right, I’m just putting this out there: Chicken thighs are one thousand percent better than chicken breasts. I love their richer, deeper flavor — and the fact that they even have flavor, because regardless of how they’re prepared or what they’ve been seasoned with, chicken breasts always taste like meat paper to me.
I usually swap those two cuts in recipes whenever I can, but I also get super excited whenever there are good, simple recipes that call for chicken thighs to start with. That’s one of the reasons why I’m psyched to try this herbed chicken — the other, bigger reason is because of the lemon cream sauce.
“I need this lemon cream sauce in my life more than anything,” Chungah Rhee wrote on her always-fantastic site, Damn Delicious.”Coupled with the browned up bits from searing the chicken with added butter, garlic, and heavy cream, this cream sauce is E-P-I-C.”
I’m also ready to add this sauce to my life. It sounds like something that I’d legit serve with everything, drink out of a mug, or lick directly from a piece of discarded aluminum foil. (I remain convinced that one of my birth parents was a raccoon.)
It just takes 10 minutes of prep and 40 minutes of cook time to get this tangy, creamy chicken dish on the table. (And when she says it’s creamy, she means it; the sauce does require a half-cup of heavy cream.) The rest of the ingredient list is mostly made up of pantry and fridge staples, like dried spices, fresh lemon juice, Dijon mustard, and chicken broth, so this might become one of my weeknight go-tos.
And no, it’s not just because of the chicken thighs. (Okay, maybe it’s because of the chicken thighs.)
