File this one under “Things I Wish I’d Thought of First.” How ingenious, right? Thai red curry paste and creamy risotto come together to make this satisfying bowl of comfort food — with a kick.

This recipe features some elements of a traditional risotto — garlic, onions, arborio rice, chicken broth — but it deviates from the classic when you add the ginger, red Thai curry paste, coconut milk, lime juice, brown sugar, soy sauce, and baby bok choy.

To really mimic the authors’ favorite Thai curry recipe, they topped their risotto with cherry tomatoes, pineapple, and fresh basil.

If you’re not afraid of mixing things up every now and then, you should definitely add this risotto to your dinner repertoire.
