We often see mushrooms as a welcome addition to an already tasty side dish or protein on a menu, but we forget they are delicious all on their own. Well move over, mushroom risotto, mushroom lasagna, or even beef Wellington with that thin layer of tasty mushroom paste below the surface! Sometimes we just want mushrooms. Plain and simple.

When it comes to roasting vegetables, it can often seem like a long process. Root vegetables can take the better part of 40 minutes to caramelize in the oven, but mushrooms are different. They require the same, minimal hands-on time that their heartier brothers do, but only require a quick 15 to 20 minutes in the oven. Glorious, right? Right. The simple roasted mushroom is as humble as it is perfect.

This recipe combines butter, garlic, lemon juice, thyme, rosemary, and pepper together and tosses it all with whole cremini mushrooms. They are spread out on a sheet pan to roast while you bring the rest of dinner together. When the mushrooms emerge from their buttery oven den, they are filled with flavor and are truly a great side dish for any meal. The roasted mushrooms can quickly be cut, diced, or even puréed to work with other meals all week long.
