Late Winter Salad Recipe: Miso Slaw

We are always on the hunt for great winter salads and slaws. In fact, winter may be one of the best times for salads! We love all the crunchy combinations of winter vegetables with fresh winter citrus. Here’s one more recipe for a winter slaw from reader Jennifer; she tosses convenient slaw mix from Trader Joe’s with a homemade blend of miso paste, rice vinegar, ginger, and garlic.

Miso Slaw

Miso dressing
1/3 cup rice vinegar

3 tablespoons yellow or red miso

3 large garlic cloves, peeled

2 teaspoons sugar

2 teaspoons chopped fresh ginger
2 teaspoons sesame oil
2 teaspoons soy sauce

1/4 cup olive oil
1/4 cup mayonnaise

Mix everything in a blender.

Salad ingredients
1 package Trader Joe’s broccoli slaw
1/2 bunch green onions, chopped
4 cups chopped spinach
1/2 cup finely chopped roasted almonds

Mix dressing and salad ingredients in a large bowl. Garnish with almonds and chill.
