Halloumi Hummus Bowls Are the Lunch You’ve Been Looking For

Bringing my lunch to work seems like a small thing, but it really changes my whole day. Nothing makes me feel like a grown-up who is on top of her things and adulting like a boss like the sight of one of my microwave-safe glass meal prep bowls tucked into my bag — especially if I’ve packed something heathful, fresh, and delicious inside. Check out me and my grain bowl! I think. I am really winning at life. Then I leap into the second half of the day riding high on the thrill of accomplishment and roasted broccoli.

That’s why I’m coveting this halloumi hummus bowl the way some people covet diamond rings or Super Bowl tickets. If I had that bowl in my bag, it would absolutely make my entire day. I can’t wait to try it.  

Start with salty, savory halloumi cheese cut into slices, and make sure to pat it dry with a paper towel so it will get a nice, crispy crust when you cook it. Pour a little bit of olive oil into a skillet and cook the halloumi for about three minutes on each side. You’ll know it’s ready when it turns golden-brown and gets a nice crispy exterior.

Set the halloumi aside and make the salad base by tossing cooked pearl couscous with some salt, pepper, olive oil, and fresh lemon juice. Then add halved cherry tomatoes, sliced (seedless) cucumber, and fresh oregano and mix all the ingredients together. Give it a spritz of lemon juice and serve it topped with hummus and halloumi. It’s perfect to eat right away, while the cheese is still warm, but you can also divide it into meal prep bowls for later.

There’s also a lot of room to experiment with this bowl. You can add shredded chicken for some more protein, or if you want something a bit more substantial. Chickpeas would work too, and you could use crispy ones if you’d like a bit of crunch. The author recommends adding olives for a bit of a briny, Mediterranean tang, and honestly I’m a fan of olives in almost anything. You can also serve it over greens for more vegetables, or just toss in some green beans or broccoli, or whatever you like. With a recipe like this, you can really play around with the components until you get exactly the meal you want.
