Get These Cilantro Lime Chicken Thighs on the Grill ASAP

It’s almost time for grill season, and I can’t wait. I don’t particularly like sunlight or eating outdoors, but I love the way food tastes when it’s cooked over a charcoal grill — especially chicken in a bright, citrusy marinade like these cilantro lime chicken thighs from Damn Delicious.

To start, chop fresh cilantro leaves and mix them with olive oil, fresh lime juice, fresh lime zest, salt and pepper, a bit of cumin, and some chili powder. Using fresh lime juice and zest will make the end result taste much brighter and more citrusy than bottled lime juice, so try to juice your own limes if you can.

Combine the chicken and the citrus marinade in a large bowl, or by putting it all in a big Ziploc bag and mixing them around. Make sure the chicken is evenly coated, and let it sit in the marinade for at least two hours, or overnight if you can.

Then just grill the thighs on a hot grill until they’re cooked through, and eat them immediately. If it’s not yet grilling season in your area, you can also get excellent results by grilling these chicken thighs indoors on a cast iron grill on your stove. Just add a bit of oil to the pan so they don’t stick, and they’ll be delicious.

You can serve these chicken thighs with rice or potatoes, or you can even slice them up and use them on salads. Personally, I think they sound like they’d make fantastic grilled chicken sandwiches. These would be fantastic for meal prep, too. Just grill a big stack of them over the weekend and prepare to enjoy them all week long.
