Costco’s Four-Pound Carrot Cake Is Perfect for Easter

Easter is one of those occasions that calls for a decadent meal. Creamy deviled eggs. Sweet and salty baked ham. And for dessert, a springtime-appropriate carrot cake, of course.

Easter, at its best, should be all about the food, not the stress it takes to make it. But I know from experience that holidays like this one rarely go down that way. If you’re in charge of the menu and feeding your guests, then you can end up trapped in the kitchen, sweating over the stove, with barely enough energy leftover by lunch time to actually enjoy what you’ve so painstakingly prepared. It doesn’t have to be that way! Fix up your favorite appetizers, but let Costco take care of dessert. The beloved big box chain is stocking a four-pound walnut carrot cake just in time for the holiday weekend.

Costco is known for peddling what should be regular-sized foods in unnecessarily giant sizes (here’s an inexhaustive list: lobster claws, cookie cake, cookie butter cheesecake, tub of Nutella) but in the case of this carrot cake, I think it actually makes sense. If you’re anticipating a big group at your Easter Sunday brunch you might as well be prepared with enough cheesecake (at the very least) to keep everyone satisfied.

The Costco cake is two tiers of sweet and savory goodness. It’s topped with an indulgent cream cheese frosting, while an apricot and walnut filling balances out the tangy carrot flavor. The outside of the cake is coated with even more carrot cake crumbs. Not only is it four pounds, but as Delish points out, it’s also ten inches across — that’s almost a foot of cake! I’ll take a cartful, please. Also! It’s only $14.
