Prepping a few key ingredients when you have a spare moment — whether that’s on a Sunday afternoon or in the morning before you head out for work — is the greatest gift you can give yourself. Take this skillet meal, for instance: If you cook some quinoa and chop some veggies ahead of time, this satisfying dinner can be on your table in as fast as 15 minutes.
The fun part about this dish is that almost all the ingredients for it can be purchased at Trader Joe’s. And if you don’t have a Trader Joe’s near you, you can also easily pick up similar ingredients (your favorite chicken sausage, a good-quality jarred pasta sauce) at your local grocery store.
If you carve out some time, you can cook the quinoa, chop the bell peppers and onions, and shred the kale ahead of time. Then, when it comes time to make the meal, all you have to do is grab those ingredients from the fridge and get cooking!
You just sauté the prepped onions and peppers in a skillet; add in pre-sliced mushrooms and Trader Joe’s chicken sausage; and then stir in the prepped shredded kale, cooked quinoa, and some Trader Joe’s spicy arrabbiata sauce. Top with some mozzarella cheese and you’re all set.
This recipe makes meal prep manageable, and leaves you with a flavorful dinner you can make at a moment’s notice. Can’t beat that!
