Weekend Project: DIY Crunchy Snack Bars

The key to success in life is always making sure you have plenty of snacks on hand. This is true for all ages; adults (those 3 p.m. slumps at work are no joke) and kids (you don’t want to mess with a hangry 5-year-old) alike need a little something to keep them going between meals. But why buy when you can make your own?

These crunchy snack bars are made in one bowl, which means less cleanup for you (yay!). Simply combine pitted dates, rolled oats, uncooked quinoa, chopped almonds, pumpkin and chia seeds, almond butter, honey, vanilla extract, and salt in a bowl and mix until combined. After pressing the mixture into a pan and baking, cool completely before drizzling with dark chocolate and cutting into individual bars.

Wrap these up and grab one whenever hunger strikes. A little bit chewy, a little bit crunchy, and perfectly sweet, these bars beat anything you can get at the store.
