Make This Creamy Lasagna Chicken Soup for Dinner Tonight
I love lasagna. There, I said it. I’m not afraid to admit my love for this carb-heavy, cheese-laden dish in a time of watching waistlines and dietary restrictions. That said, lasagna can be so time-consuming to prepare.
This soup is the solution to having “lasagna” on a weeknight. It’s not quite lasagna, but it’s reminiscent of it — and you can whip it up in a moment’s notice.
This recipe strays from traditional lasagna in that it calls for chicken (pick up a rotisserie on the way home!), uses less noodles, and is void of ricotta all together.
This soup comes together in 30 minutes or less, gives you the silky noodle mouthfeel (I already regret using those words), and is thickened with cream cheese for a bit of tang. It’s packed with basic pantry spices, shredded chicken, and some fresh thyme or parsley for a bit of color. It’s sure to go into your weekly rotation from now until, well, basically forever.
