This Chicken Caprese Mac and Cheese Is a One-Skillet Wonder

Looking for an easy, tasty dinner you can make without a lot of ingredients? Well, duh, we all want that kind of recipe. This dish is a skillet meal that will quickly end up on your family’s weekly rotation. It will remind you of warmer summer months, it doesn’t require a lot of prep or messy dishes, and the recipe even uses a bit of science to bring it all together in the end. That’s right, chicken science. It’s a thing!

The first step is to cook the chicken and remove it from the pan. Next up you add the broth, evaporated milk, and cornstarch. Now, this is the science part: Because evaporated milk has been evaporated, it has a lower water content, which makes your sauce creamier in the end and allows you to not strain your pasta. Ingenious!

The noodles are added in and after 10 minutes of simmering they’re good to go. Then the cheeses, tomatoes, and basil can be added in. The chicken is placed on top or plated on individual plates as you dole out dinner. This would also make a great addition as a side salad to take to work and to eat cold.
