Whenever my family sits down for a big feast, mashed potatoes are the one dish that physically cannot be passed around the table fast enough. Before the pot lands in my grubby little hands, I monitor everyone’s mountainous scoops with watchful eyes. And no matter how large the servings seem to be (each bigger than the last), there is somehow always enough to go around. That, my friends, is the magic of mashed potatoes.

Everyone has a preferred style of mashed potatoes: You can take them plain with a pat of butter, salt, and pepper, or make them really garlicky and mix in a few herbs. There’s the crowd-pleasing volcano-style with gravy lava pouring over the sides. And of course, there are those who take their potatoes cheesy — the cheesier the better.
