Lunch is the hardest meal to plan. Prepping for breakfast is straightforward with smoothies, muffins, and even breakfast burritos. Dinner always steals the show and is usually the meal people put the most effort into. And then there’s lunch. I usually want something kinda healthy that keeps my energy levels up, and I don’t always want a salad. Sandwiches are great, but what else?

That’s why I was excited when I saw this delicious BBQ chicken quinoa bowl from What’s Gaby Cooking. It looks super easy to prepare on a Sunday night for the week, and something I’d actually want to eat again and again.

Gaby Dalkin describes this recipe as basically BBQ chicken pizza reincarnated as a grain bowl. I mean, what else do you need to know about this recipe besides that? You essentially make shredded chicken and add some BBQ sauce to it and then serve the chicken over quinoa with corn, black beans, scallions, avocado, cilantro, and white cheddar. You can put all the ingredients into containers on Sunday and then take one before you go to work every day.

There’s no recipe for making the shredded BBQ chicken from scratch, but we have a slow cooker recipe that might be useful to break it down. You just need some chicken breasts and water or stock.
