I Bet You Can’t Have Just One Slice of This Ultra-Moist Banana Bread

More than a year into the pandemic and you thought we were done chasing the dreams of even better banana bread? *Insert evil villain laugh here* No, there’s always another, better banana bread out there, waiting to be made. Banana bread became almost a cliché over the last 14 months or so, but it remains a nice, easy treat to make and a good way to use up bananas on the verge of going bad. So when a new recipe shows up with ideas on how to improve, it’s time to listen in.

This version, from blogger Hip Foodie Mom, uses the classic baking trick of applesauce to add extra moisture to the bread and adds sweetness in the form of honey. “My daughters and I are currently obsessed with this banana bread recipe,” the author, Alice Choi, says. “We can’t get enough of it. We’ve been slicing this up in the morning for breakfast and eating some for an after-school treat.”

Applesauce is often used in baking to replace fats for people who are trying to cut down on the calories, but this banana bread uses it in addition to the fat — butter, in this case — which means there are just layers upon layers of moisture in this flavorful version. It also uses honey for some of the sweetness, which is another ingredient that tends to add more moisture than its traditional counterpart — but, again, this recipe uses the honey in addition to the sugar. The end result is a super-moist, almost-creamy loaf. The addition of a whole sliced banana on top adds a little fun and elegance, too.
