This TikTok-Famous Cucumber Sandwich Is My All-Time Favorite WFH Lunch

My wife and I work from home a few days a week, so we’re always on the lookout for interesting and inexpensive lunches that we can prep together. At the end of last year, she stumbled upon a video of TikTok user @averyhittcoble recreating a cucumber sandwich recipe from her childhood. Coble recently acquired the recipe and demonstrated the steps, layering the sandwich with mayonnaise, peppers, tomatoes, onions, and cucumbers with dashes of seasoned salt and dill weed.

Since discovering this video, my wife and I have made the sandwich too many times to count and are completely in love with it. It’s veggie-heavy, wonderfully flavorful, and beautiful, to boot!

How to Make the Viral Cucumber Sandwich

In essence, Coble’s recipe is a well-seasoned cucumber sandwich that’s loaded with crisp vegetables. She lays out the steps as dictated in her friend’s recipe.

First you’ll peel the cucumber and slice it very thin, cut a yellow and red bell pepper into strips, and thinly slice a tomato and sweet onion. Generously slather two slices of your favorite sandwich bread with mayo, then layer the cucumber, tomato, and onion on one slice of bread. Sprinkle with a generous amount of dill weed and Lawry’s seasoned salt, add a layer of peppers, then sprinkle with dill weed and Lawry’s again before adding the second slice of bread. That’s it!

Why I Love This Sandwich So Much

This cucumber sandwich is fresh, colorful, flavorful, and filling without being too heavy. Plus it’s incredibly easy to make. I love the crisp texture of all those vegetables and the fact that it’s easily adaptable.

We’ve also found that you can prep the veggies ahead of time and keep them in the fridge for two to three days, so it’s easy to pull the sandwich together anytime you want it.

If You’re Going to Make This Cucumber Sandwich, a Few Tips

  1. Use your favorite sandwich bread. We’ve enjoyed the sandwich most on slices of wheat or multigrain bread. Coble uses potato bread.
  2. You don’t need to peel the cucumber. We enjoy the sandwich just fine even when we skip this step.
  3. Go easy on the onion. Too much of the sweet onion easily overpowers the sandwich. We like using a vegetable peeler to get nice, thin slices.
  4. Same with the Lawry’s. The recipe calls for a generous sprinkle of the seasoned salt, but too much and you’ll be chugging water the rest of the day.
  5. Add some avocado. We haven’t strayed too far from the original recipe, but a layer of sliced avocados bulks up the sandwich and adds a nice, creamy counterpoint to all the crisp veggies.
