If you’re getting tired of eating the same breakfast over and over and looking for something unique to level up your mornings, then you’re going want to beeline over to Trader Joe’s for their latest breakfast find — especially if you’re a fan of pancakes and the color purple!

Back by popular demand, Trader Joe’s has finally restocked the Ube Mochi Pancake & Waffle Mix, which is priced at a mere $3.99. This gluten-free mix is made with a rice-flour base, tapioca starch, and purple yams to create a “chewy mochi pancake” that is quite literally purple in color. And the color isn’t artificial; this breakfast favorite uses a vegetable juice mix made with red cabbage and radishes. Simply mix in eggs, water, and oil/butter, and then make the only hard decision you’ll have to face: whether you want pancakes or waffles. (Each box makes six servings.)

TJ’s shoppers are absolutely delighted to see this breakfast item back on shelves: “The pancakes are my FAVORITE,” writes one eager shopper. Another admits that they were so excited to see the mix back on shelves, they bought five boxes at a time to stock up.

The love for all things ube doesn’t stop at the pancake mix, either: Shelves are now also stocked with ube Joe-Joe’s cookies filled with ube crème and dipped in ube and vanilla flavored yogurt. Ube pretzels, dipped in an ube yogurt candy coating, are also a fan favorite. There are ube tea cookies (purple shortbreads coated in powdered sugar), and, best of all, ube mochi purple ice cream with sweet potato rice dough. Sign us up.

So be sure to get your hands on a box — or five — the next time you’re shopping at Trader Joe’s. One shopper admits it’s the “perfect breakfast,” so you better stock up before this limited-time item is gone (again!).
