10-Minute Coffee Cake Mug Cake

What if I told you that banana bread didn’t have to take all day to make? What if I followed up by telling you that you can make it in a smaller serving fit just for you? If you immediately thought of both to be impossible, then I have some news for you. In an exciting turn of events, vegan content creator Jessica in the Kitchen — who is the self-professed “vegan comfort food queen” — has made that exact dream come true with her recipe for Banana Bread Mug Cake. And trust me, this is one you’re going to want to bookmark for later.

“Five minutes is all you need to make this fluffy, delicious banana bread mug cake for all your midnight cravings,” she says in her Instagram video. “Do you remember when we were all baking banana bread like a million times a week? This is the mini version of it, and I promise you’re going to love it.”

The best part? It’s vegan!

All you need are a few simple, all-natural ingredients to make the recipe: bananas (the key ingredient, of course), flour, sugar, oil, almond milk, sea salt, baking powder, cinnamon as an optional ingredient, walnuts, and chocolate chips. In your mug, whisk your mashed banana, oil, milk, and sugar, until well combined — about 30 seconds. Then, add in your dry ingredients, stirring for an additional 20 seconds. Fold in both the walnuts and chocolate chips before placing in your microwave for 80 seconds. Let cool for a few minutes and enjoy!
