I love avocado with eggs. I add slices on top of fried eggs on toast, and inside egg sandwiches. But I had never tried adding avocado to scrambled eggs — until last week. Why not? I have no idea — these two things were meant to go together.
I will be the first to admit that chunks of avocado in scrambled eggs looks a little odd. There's a greenish cast to the whole dish (Green Eggs and Ham, anyone?). But ignore that. The soft, creamy eggs coat the bites of even creamier avocado for one big mess of savory creaminess. It's utterly delicious.
It's also extra-simple to make. Just scramble some eggs until they are barely set, and still soft. (See how to make creamy, luscious scrambled eggs.) Dice an avocado and stir it in, gently, cooking until it is just warmed through. Pile on toast and eat immediately!

I make my daughter a southwestern omelet sometimes when we do "breakfast for dinner" with cheddar cheese, avocado and cilantro. Queso fresco sounds delicious! I, however, cannot stand avocados :-(
One of my favorite dishes at a restaurant we visit is called Eggs Franciscos - Scrambled Eggs with Avocado slices, tomato, and bacon on top of an english muffin, smothered in white queso. Heavenly decadent.
This pretty much my go-to anytime of day meal. Sometimes I add in herbs or put some salsa on top, or in some cases a little cheese. Wrap it up in a buttery tortilla and you really have a winner! Oh avocados make everything wonderful...
My favorite breakfast/lunch of the moment is egg salad served with slices of avocado with a squeeze of lemon and salt and pepper. No bread. I'm loving this combo!
I can be fussy about what I eat with eggs, but I do enjoy a little scrambled eggs with mashed avocado and lime in a soft tortilla topped with some crumbled panela. I have some medical issues that require me to eat soft foods on a fairly regular basis, and this is one of my go-to meals for those times. It's affordable, tasty, satisfying, and soft--all I require! My husband likes his tortilla loaded with eggs and avocado and cheese and then topped with salsa, which I think just overwhelms it all, but hey, to each his or her own! :)
The morning after my now-husband proposed to me, I made us a lovely scramble with avocado. Perhaps due to my extreme emotional state (I'M GETTING MARRIED TO THE BEST MAN IN THE WORLD!), I dumped the avocado in way too early and ended up with a major case of green eggs.
He still married me though, which just goes to show that, while it looks unappetizing, avocado + scrambled eggs = win.

But I also like scrambled eggs with avocado as well. It calls for a little cilantro or chive snipped into the scramble and a squeeze of citrus but then I'm happy.
One of my favorite meals at this little breakfast place in Honolulu, Bogarts, was their migas.
They scramble eggs with black beans and cheddar/monteray shredded. Throw it on a plate, top with salsa and avocado, garnish with blue corn tortilla chips.

put a little cheddar, bacon, and salsa on there and you've got the BEST! BREAKFAST! EVER!
hm, avocados and eggs sound good together, but i think i will try this with the avocado on top. every time cooked avocado sounds like a good idea, and every time i think it is gross. the flavor changes and it is, in my opinion, totally weird-bad! but, point taken, (raw) avocado + eggs = delish

@vbf, I completely agree! I actually love the temperature/texture of a room temperature avocado! Why warm it and yucky it up? :)
Some Central American countries' version of guacamole includes eggs and avocado. We drop the E in guacamole, so it's guacamol and make it with chunks of avocado, boiled eggs sliced into same size chunks as avocado, chopped onions, lots of fresh lime juice and salt to taste. Mix it all together in a bowl. It's more like a salad (tastes best when cold). Mmm, this is one of my FAVORITE dishes!
YES YES! Lately I have been having half a bagel topped with some scrambled eggs and mushed up avocado. So happy to discover this combo!
A quick favorite in our house is migas--torn tortillas and onions, eggs, salsa with the avocado and cheese stirred in at the end--so yes we add avocado to eggs all the time. I also add chiles at the end, and often add other stuff along the way--it is one of those "kitchen sink" recipes that lets you use stuff up.
There is a restaurant I eat at whenever I return home to Chicago, and I always order the bacon and avocado omelette. Uhhhhh-mazing.

certainly worth trying (because there are obviously some lovers out there), but i love avocado and i love eggs, and i hate the two together...it somehow ruins them both for me--i think it is the temperature, as i like for the avocado to be a cool counterpoint and it always feels like warm goo in the eggs.
Oh I do this all of the time. As a matter of fact, I can't think of anything that avocado doesn't go well with.

I do this with a tofu scramble and chives or green onion and a bit of homemade salsa and add black beans makes a nice light dinner.
I love avocado in anything! I scramble eggs with avocado, cherry tomatoes, smoked salmon and spinach! Oh, and then I top it off with a little goat cheese. Yummmmmmm
very late to the conversation, but my favorite omelette has avocado, cream cheese, black olives, and bacon in it.
Instead of slicing the avocado, I just cut it in half and then squeeze each half out of the peel and onto the eggs, and then mix it up.
I also have been making a a corn tortilla, warmed and spread with avocado, then topped with a couple pieces of bacon and a poached egg. So good!
