Recipe: Lemon Garlic Chicken

2010_01_11-LemonGarlicChicken.jpgWhen Emma write her post on Slow-Cooker Lemon Garlic Chicken a few years ago, I started drooling immediately. Unfortunately, I don't have a slow cooker, but I took a look at the ingredient list and hacked my own recipe together using a baking dish and the oven!

 
 

Lemon Garlic Chicken

Ingredients:
1 package of chicken thighs & drumsticks (4 thighs & 4 drumsticks)
3 lemons
15 cloves of garlic, peeled (See: How to Peel Garlic Quickly and Easily)
Salt & pepper to taste
2 tablespoons fresh thyme leaves

Preparation:

Preheat oven to 375 degrees F.

In a bowl, add the chicken pieces. Slice the lemons in half and juice them. Add the juice and the lemon rinds to the bowl, along with the garlic, salt, pepper, and thyme. Mix well with your hands, then dump this all in a large baking dish.

Put the dish in the oven and bake the chicken for 30 to 40 minutes, basting every 10 minutes. When the skin gets crispy and the meat is cooked through, it is done.

Sounds wonderful! I think I am going to make it and try adding a few potatoes and carrots to the mix. We made a roasted chicken like that night and it really soaked up the lemon/garlic goodness.

Oh man Made this last night and it was absolutely divine!

Made this for dinner tonight and it turned out fab! Not only is it quick and easy, it's mouth-watering delicious. I particularly loved how the lemon and garlic scents warmed the entire house as it was cooking.

I've never really basted before, so I just spooned a bit of liquid over the meat every 10-or-so minutes. Took about 40 minutes for the chicken to come up to temp, and I was worried about it possibly drying out (my previous chicken attempts have yielded less-than-stellar results), but the meat was flavorful, moist, and all around perfect! My roommates are certainly pleased.

This will definitely be included in my dinner rotation, thanks so much!

YUM! made last night, and had leftovers today. i used boneless skinless thighs, but i'm sure the bone-in, skin-on would have been much better. this recipe will definitely be a staple for me!!

This looks absolutely delicious...will be making this soon.

I made this tonight and it was very flavorful! It did take a bit longer than expected to cook (45 minutes) - but the prep work is so minimal that you could have this meal in under an hour easily!

I served it with mashed potatoes and steamed green beans. yum! I will be making this again.

I make this a lot and use it as a staple in my 'family kitchen' cooking classes. I recommend making a double quantity, eat one lot as is on the first night then use the leftovers to make something such as a chicken and couscous salad a night or two later...no-one will know it's leftovers. Use chicken breasts or tenders to wean the children off chicken nuggets ;) you can even saute these on the stove top and it takes less time to cook than nuggets
