Soup may very well be the perfect food to get you through fall and winter. It warms you on a cold day, sustains you when you’re sick, helps you feed a crowd, and makes easy-to-eat leftovers. We love a “throw-it-all-in-the-pot” stone soup, but we also appreciate a soup with a bit more forethought. 3 Tips for Making Soup from Scratch

  1. Use good-quality broth. For a full-bodied flavor, use homemade chicken stock or vegetable broth or a quality low-sodium store-bought broth. If you’re in a pinch, even a 10-minute broth will add flavor and body.
  2. Have a freezer plan. If you’re tempted to stash a few servings of soup in the freezer, know that some types of soup freeze better than others. The noodles in pasta-packed soups, once frozen and thawed, will devolve into a mushy mess — so eat them within a day or two. Chowders and other soups with milk or cream can turn grainy when thawed. Still, almost any soup can be frozen if you plan ahead. Simply prep the soup up to the point of adding the pasta or dairy, then freeze. After thawing, continue with the recipe, adding the remaining ingredients.
  3. Use the right equipment. A heavy-bottomed pot or Dutch oven is a must-have for any serious soup chef. The heavy bottom means more even heating, which helps with browning ingredients to build a flavor base. If hands-off cooking is more your style, invest in a slow cooker or an electric pressure cooker.
