How Do I Use Coconut Oil When Baking?

Editor: Since coconut oil is such a relatively new ingredient to our kitchens, it can get a bit confusing how it’s meant to be used if the recipe doesn’t specify. In general, if just “1/4 cup coconut oil” is listed in a recipe, it’s meant to be used as a solid. Melted coconut oil should be listed as “1/4 cup coconut oil, melted.” Not every recipe will follow this guideline, though, so it’s good to read through the recipe for context clues about what the recipe writer intended. Also, I usually melt coconut oil in 10 second bursts in the microwave.
