Over the years, coconut oil has had a bad rap, but studies are now finding it has great health benefits and is a wonderful substitute for other oils in your cooking and baking.
Because it tolerates high temperatures, coconut oil is a great substitute for shortening, butter, margarine, or vegetable oil. I find that when I bake with it, the resulting muffins, scones, or cakes have a special lightness to them and a slightly sweet fragrance unique to coconut oil. I can confirm with great enthusiasm that those Dark Chocolate Brownies from Gluten-Free Goddess are the BEST gluten-free brownies in the world. In fact, they are in the top 3 of ANY brownies I have ever made. Proceed accordingly (make them).
An easy treat that I love it a baked sweet potato topped with coconut oil, a pinch of salt, and good amount of quality cinnamon. Delicious!

I made a Breakfast Cookie today....sort of like a granola bar but in a cookie shape. Coconut oil, oats, dried fruit, mashed bananas, coconut flakes, pecans. They are very good and a big hit. The only problem I have with coconut oil is the price....very expensive for a small jar.
Question! Can you cook veggies with it or use it to make salad dressing?
@Annie, yes. If you want that coconut flavor, go for a virgin, unrefined oil like from Trader Joes (it's quite nice in a salad with fruit), but some other coconut oils, like spectrum, don't have as noticeable of a coconut odor/flavor if you would prefer it.
Personally, TJ's coconut oil is a godsend price wise. I even use it [a seperate bottle] as my moisturizer!
I agree totally with this, it's excellent for popcorn too and popcorn makers.
It smells awesome as it heats up. I have not used the TJ brand, bu considering price I am going to try.
I use it to cook all the time because it has a higher smoke point then olive oil. If you're making a curry or coconut thai soup sauteing your base in coconut oil works really well. I also butter my (still warm) toast with it.
I use coconut oil every morning when making my oatmeal pancakes for breakfast.
I only make my weekly popcorn with coconut oil. I add a small dollup to my hot cocoa when I want a change of flavor too!
I've had good results with coconut oil as well, but once when I blind-baked a pie crust, it splattered all over my oven (because there were a few visible coconut oil flakes and I hadn't melted the coconut oil before using. Well, I learnt from that to always melt before using. Isn't that so?

Not baking, but last night, I found that using coconut oil for fried rice is very nice. I toasted a bit of unsweetened coconut flakes in it, then added my onions, peas, other veggies, then rice, egg, a hint of oyster sauce, and soy sauce. It gave it a tropical, SE Asian touch.

I second KATVETRANO on the interest in savory coconut oil recipes. One thing I will mention, though, is that roasted veggies (especially root veggies ESPECIALLY sweet potatoes) are really yummy when made with coconut oil. I also made the coconut rice from Faith's casseroles cookbook last night and it was delicious. Basically, if I'm remembering correctly, saute the rice in butter (or coconut oil), add some coconut milk, water, cinnamon, pepper, and unsweetened shredded coconut and bake. Really really good.
I add it to boxed cake mixes to add moisture and taste but I mainly use it for chapstick. I soften it and spoon it into my old tubes and then freeze it. Works like new and my lips have never been softer. I used to use Chapstick several times a day, but with the coconut oil I am down to just at night!!
I've made the 101 Cookbooks recipe a bunch of times with success. In fact, thank you for posting it and reminding me to use up my brown bananas with it!

I use coconut oil when baking cakes and also subbed it for butter in frosting (but it needs to be refrigerated). I fry eggs in it, saute veggies, and fry plantains. I love the smell when it's heating up!
I've been using a coconut oil called Memory Oil, and it is fantastic! Can't go wrong with it, it is only $10 a 14oz. bottle! The value is just as great as a $20-$30 bottle of other coconut oils! I'm not sure why coconut oil is so expensive in other places. Here in small-town Germany it costs about 2 euro for a big jar at the Asian supermarket. At the regular supermarket, it's about 4 euro.
I bought some coconut oil so that I could use it to pop my weekly batch of popcorn, but I can't seem to figure out the best heat/time ratio! Normally I use canola oil, and can pop every single kernel within about 5 minutes. With coconut oil the kernels seem to pop at a much slower rate, and I'm left with 1/2 of the kernels unpopped, and the popped kernels scorched from the oil. Is there a secret?
