We’re taking a page from one of our favorite summer salads to create a go-with -everything watermelon salad flavored with rice vinegar and red onions. If sweet and spicy is your thing, this is a salad to add to the dinner mix.

Why This Upgrade Makes Watermelon More Fun

You may be familiar with mild-flavored cucumbers as the main star of this Asian-inspired side, but this summer it’s time to let watermelon steal the show. Just like cucumbers, watermelon’s refreshing qualities work to tame the bite of the onion and heat of the chiles. The result is a summer salad you can pair with just about any main course.

How to Make It

Mix together 2 cups of bite-sized piece of watermelon with 1/2 cup of sliced onion, 1/2 teaspoon red pepper flakes, and 1 tablespoon rice vinegar. Serve immediately or chill for later.
