We’ve found that the key to keeping our lunch salads interesting is switching up the kind of salad dressing we use every day. Just subbing walnut oil for olive oil or whizzing in a handful of fresh basil will do the trick, but it also helps to have a running list of excellent recipes to choose from.
We can make any of these in batches small enough for just one salad or large enough to last a whole week. Try these tossed in pasta salads and grain salads, too!
