Fast & Healthy: Seven Quinoa Recipes

When we're busy and famished and need to make a fast, healthy dinner, we turn to quinoa. Though great on its own, the easy-to-cook super seed can also be combined with nuts, herbs, vegetables, or protein for a flavorful and nutritious side or main dish. Here are seven quick and colorful quinoa recipes to take us from summer to fall, with ingredients ranging from cucumbers to butternut squash.

just bought the quinoa/flaxseed bread at wholefoods--it breaks apart if you're not careful, but it is delicious and very pretty to look at.

quinoa!! its the best
here is my quinoa corn chowder recipe in approximates but you cant go wrong:
1/2 cup quinoa
2-3 cups broth
medium onion
couple cloves garlic
potatoes (i like purple ones!)
a red pepper
a can of corn or equivalent amt of fresh corn or frozen
milk or soy milk
paprika
dill (fresh is best)

put some oil in yr stock pot and add the chopped onion n garlic, pepper, then add the quinoa and toast it a bit.
add the stock/broth, potatoes, corn and simmer up to half an hour
if its lookin good, add the milk/soymilk, bring back to simmer, turn off the heat
add 1-2tsp of paprika
add fresh dill to each bowl of the chowder

My favorite is to mix some browned soy chorizo crumbles into a bowl of quinoa. It tastes like eating straight chorizo, but stretches it longer.

I love the quinoa salad from the Peruvian restaurant I used to work at. Bell peppers, avocado, hearts of palm, olives; salt, pepper and olive oil to taste. My favorite dish while pregnant.
