Paul's Uova In Purgatorio
Quick Weeknight Meals Recipe Contest 2009

thumbs up

Recipe: Uova In Purgatorio
How long does it take? 15 minutes
Category: Vegetarian
Name: Paul
Why is it a favorite meal? Quick, rustic, and full of flavor.

Uova In Purgatorio

Ingredients:

5 Large Eggs
1/2 can of Whole Plum Tomatoes (San Marzano are best)
3 Large Cloves of Garlic
1/4 Cup Extra Virgin Olive Oil
1/2 Cup Torn Basil
Red Pepper Flakes
Salt/Pepper

Place 1/2 cup of Plum Tomatoes, with some of the tomato juice, in a bowl and crush with your hand until the tomatoes are broken but not completely smashed.

Heat olive oil in a large skillet over mid-high heat. Slice Garlic as thin as possible and add to the hot oil, season with salt and red pepper flakes. When garlic is light brown, a little darker than usual, add the crushed tomatoes, season with salt and pepper.

Cook tomato sauce until you can pull a spoon across the pan and the sauce stays separated.

Make 5 holes in the sauce and crack an egg into each hole. Cover and turn the heat down to medium. When eggs are firm but yolks are still runny add the basil and plate. Drizzle with a little olive oil and you're ready to eat, Buonappetito! This dish is best served with toasted semolina or other crunchy bread.

Thanks Paul, and good luck! Readers, give Paul a thumbs up if you like this recipe!

Mmmm, I love eggs in purgatory. I've got a recipe from Giada de Laurentiis that I use frequently. It calls for making pancakes out of leftover mashed potato and serving the sauce and eggs atop the pancakes. A regional variation or just a Giada twist on the recipe?

Looks amazing. I don't have canned plum tomatoes, but I do have fresh ones - would those work just as well, mixed with a bit of canned tomato sauce?

Made this last night, as seeing those pics brought back memories of my childhood, and it was perfect! Excellent comfort food.

Using fresh tomatoes would work just fine, just be sure to cook them down until they are soft before adding the eggs.

I make tomato sauce or soup at least once a week in the cold months and this is always what i do with the leftovers. I usually serve it over toasted stale bread. It's one of my favorite things. I've also had something similar in restaurants where they bake the eggs in tomato sauce in ramekins. soooo good.
