Going gluten-free is no easy task. Those with celiac disease, gluten-sensitivity, or IBS have to double check that their meals and groceries don’t contain the pesky protein, which occurs in processed foods and natural ones. The former includes things like certain soups, soy sauce, and flavored potato chips, and the latter includes bread, baked goods, and pastas (though the list goes on).

Luckily, in recent years, gluten-free food options have become more commonplace — restaurants put designated gluten-free dishes on their menus and grocery stores offer delicious, healthy alternatives. Still, for years, our contributor Stella, who has celiac disease, struggled to find a substitute that rivaled traditional pasta. It was always too crumbly and chalky — that is, until she came across ZENB’s. The pea-based pasta has been a total game changer for Stella, who loves the variety pack and instant bowl meals, but the brand just took it up a notch by offering a gluten-free lasagna that reviewers say tastes just like the real thing.

What is the ZENB Lasagna?

In her review of the variety pack, Stella said that the pasta alternative was so good that her whole Italian family ate it with her. That fact alone should convince you that the brand’s offerings are worth a try — especially their easy-to-make lasagna. Made in Italy, the only ingredient ZENB uses is yellow peas (and their husks, which adds more nutritional value). In fact, a 3-ounce serving will deliver an impressive (and filling) 17 grams of protein and 11 grams of fiber, which is greater compared to wheat pasta.

Still, even though the base is different to standard pasta, Stella loved the texture. “I guess these pasta-innovators were clued into a secret the rest of us didn’t know about, because the texture of this pasta is unparalleled in a celiac’s world,” she praised. “Springy and a tiny bit sticky (in a luscious, glutenous kind of way), I managed to cook my penne to al dente perfection.” Given her account, we can only imagine the soft and chewy goodness of the no-boil lasagna. Yep, you read that right: The pasta sheet goes right into the oven, saving you time without sacrificing taste.
