You’re Only 2 Minutes Away from This Sweet Potato Brownie

If you’re a fan of mug cakes (Kitchn editors certainly are!), this sweet potato brownie is going to be a new favorite. With only two minutes in the microwave, you can have a warm, fudgy treat whenever the mood strikes.

If you have cooked sweet potato on hand, either left over from dinner last night or for meal prep you did on Sunday, you can use it here. Otherwise, canned sweet potato purée works just fine.

All you have to do is grab a bowl or large mug; pour in some coconut flour, cocoa powder, and baking powder; add milk, mashed sweet potato, nut butter, sugar, and vanilla; mix thoroughly to combine; and then microwave on high for two minutes or so.

Once you pull the brownie from the microwave, you can eat it as is or top it with a little whipped cream or chocolate chips for some extra pizzazz.
