You Won’t Believe These Beautiful Meringues Are Vegan
Have you heard of aquafaba? The vegan miracle ingredient has been used in everything from whipped cream and marshmallow fluff to icing and chickpea nuggets, but never have I seen it in such a beautiful application as these meringue kisses. If you set a tray of these out on Christmas, I doubt anyone will know they started with a can of chickpeas.
The recipe for the meringue kisses only has three ingredients: water from a can of chickpeas, powdered sugar, and cream of tartar. Once you have your basic meringue mix, you can get fancy with your decorations. Try adding a bit of food coloring for the pink swirled meringues, or top some with chopped nuts before baking. A drizzle of melted dark chocolate or a dusting of cocoa powder on the baked meringues is also a nice touch.
Wrap up an assortment in cellophane, seal them with a pretty bow, and you’ve got a gorgeous gift to give out this holiday season!
