You Only Need One Pan for This Lemon Chicken with Olives

If you’re lucky enough to have a back patio, front porch, or even just a fire escape, now is the time to enjoy dinner al fresco. There’s really nothing like sitting outside on a summer evening, enjoying a simple meal and a cold glass of wine. This skillet chicken with lemon, olives, and potatoes is the perfect dish to make for such a supper.

To start, you’ll need to preheat your oven. While that’s happening you can sear the chicken thighs (bone-in, skin-on for the best flavor) in an oven-proof skillet. Once the chicken skin is golden-brown on both sides, you add in potatoes, garlic, chicken broth, green olives, lemon slices, and thyme and then move the skillet into the preheated oven.

The skillet needs to stay in the oven for about 30 minutes or so, which gives you plenty of time to get started on that glass of wine outside or to quickly whip up a simple green salad to serve alongside the chicken.

Once the chicken and potatoes are fully cooked, you can bring the whole skillet right outside to your table. While some rice or a hunk of crusty bread would be delicious here to sop up the flavorful sauce, this dish is hearty and satisfying on its own as well.
