All you have to do is combine diced watermelon, jicama, jalapeño, cilantro, red onion, lime juice and zest, and salt together in a large bowl. This is also one recipe that benefits from a little make-ahead action, as the ingredients can chill and mingle together in the fridge to create a more flavorful salsa.

Paired with some tortilla chips or carnitas tacos, this salsa will definitely earn a spot in your summer recipe rotation.
