You Need These Lemon Chicken Stuffed Shells in Your Life

Do you have some leftover chicken in the fridge that needs to be repurposed? If you do, great. If you don’t, I highly suggest grabbing a rotisserie chicken on your way home from work so you can make these lemon chicken stuffed shells tonight.

To start you’ll need to boil some jumbo pasta shells and get your skillet hot in a 400-degree oven. While those are going you can mix up your filling: shredded cooked chicken, cream cheese, lemon juice, garlic powder, Parmesan cheese, salt, and pepper.

Once the shells are al dente, scoop the chicken mixture into each shell and arrange them in the preheated skillet. Since these shells are packed with cheese, the author simply greases her skillet with olive oil before adding the shells. But if you want to make these a bit more decadent, you can follow her instructions for making a quick cream sauce to place in the skillet first.

Then all you have to do is top the shells with mozzarella and bake until the cheese is melted and golden-brown. It’s the perfect quick, easy, and comforting dish to make on a Monday.
