An electric pressure cooker is the appliance you want on your side when meal planning isn’t really your thing. It’s my answer for making breakfast foods, fast. Instead of a single meal, I can turn these versatile breakfast items into several different meals. Here are a few of my favorites.

1. Eggs

Your pressure cooker is the quickest solution for a big batch of soft- or hard-cooked eggs, made just the way you like them. Use this breakfast staple to build a breakfast pita sandwich, serve them on toast, or slice and add them to veggie-filled leftovers like ratatouille or caponata.

2. Breakfast Risotto

This comforting rice dish isn’t just for dinner. Stick to classic arborio rice or swap in nutty brown rice for a satisfying start to the day that will warm you up from the inside out. Use water instead of stock for cooking, and get inspiration from your favorite oatmeal toppings and mix-ins.

3. Pulled Meat

Tender, shredded meat that would normally take hours of simmering comes to the table in a fraction of the time when the pressure cooker is involved. Fold the meat into breakfast tacos, stuff it into burritos, or spoon over warm polenta.

4. Beans

Packed with protein, a hearty dose of beans is a simple way to bulk up breakfast. Stir them into a breakfast bowl, mix into scrambles, and add them to breakfast wraps.
