This Greek Yogurt Raspberry Pound Cake Is Trending on Pinterest
According to Pinterest’s April trend report, yogurt for dessert is gaining in popularity. “People are always looking for new ways to lighten up dessert,” the report explains. Apparently searches of yogurt desserts have been up 160 percent on Pinterest in the past year.
Before you go and think that people are just opening up tubs of yogurt and throwing chocolate chips in there for dessert (although that would be delicious), you should know that a lot of people are actually using yogurt in super-creative ways. For example, this three-ingredient peanut butter dip has been saved 50,000 times in the past year.
The most interesting way to use yogurt in sweets, I think, is with baking. It’s a delicious way to keep things like breads and muffins moist without adding extra butter.
For example, you might never guess that this recipe for raspberry almond pound cake from Amy’s Healthy Baking uses Greek yogurt. But it does! Instead of adding a bunch of butter or oil, the blogger uses Greek yogurt to lighten up her dessert. “It [also] gives this pound cake a big protein boost!” The blogger notes. So good! This recipe has been saved an incredible 98,000 times this past year on Pinterest.
I can see this being a great dessert for spring especially. It’s not heavy for a cake (thanks, Greek yogurt!), and it’s not too hot outside that you wouldn’t want to turn on your oven.
