Yogurt Is the Key to Perfect Grilled Chicken

What are you grilling on Monday? If your answer is just burgers and hotdogs, may I suggest these chicken kebabs? No, this is not the dry, bland chicken you might’ve had at cookouts before — this chicken is moist and flavorful, thanks to one special ingredient.

Yogurt! According to the author, “The yogurt helps to tenderize the meat while also adding a tangy flavor that takes on a variety of spices with the greatest of ease.” In this case, the aforementioned spices are smoked paprika and rosemary, but feel free to use your favorites here. The chicken is also accompanied by slices of red onion and bell pepper, but again you can use whatever you like best or have on hand — zucchini would also be a great choice.

The one important thing to note here is that if you’re using wooden skewers (as opposed to metal), you’ll need to soak them in water for about 30 minutes before you can thread the ingredients on them. This helps prevent the skewers from going up in flames once they hit the grill!

These would be delicious on a platter with some tzatziki for dipping. You can never have too much yogurt, am I right?
