Win at Halloween with These Mummy Pumpkin Cookies
I have mixed feelings about Halloween baking projects. While I appreciate the festive intentions behind them, they often run the risk of tasting bland. With most of the focus on the appearance and gross-out factor, flavor is often compromised in these treats.
These mummy pumpkin cookies, however, are spooky enough to earn you Halloween cred, but still taste delicious.
The cookies consist of two elements: a basic pie crust and pumpkin filling. You roll out half of the dough, cut it into rectangles, and then top it with the pumpkin filling. Cut the other half of rolled-out dough into strips, then use those strips to create a mummified effect on top.
After the cookies have finished baking and cooling, stick candy eyes onto each cookie to really seal the deal.
