medium limes
- 1/4 cup
fresh mint leaves (about 3 sprigs), plus 2 sprigs for garnish
- 2 tablespoons
granulated sugar, plus more for rimming if desired
- 4 ounces
coconut cream, such as Good and Gather
- 2 ounces
white rum, such as Bacardi
- 2 ounces
coconut rum, such as Malibu
Ice
- 4 ounces
seltzer water or club soda, divided
- 2 teaspoons
fresh or frozen pomegranate seeds, divided
Instructions
Finely grate the zest of 1 medium lime until you have 1 teaspoon. Juice that lime and more limes as needed until you have 2 ounces (1/4 cup). Place the zest and juice in a small bowl or mortar.
Add 1/4 cup fresh mint leaves and 2 tablespoons granulated sugar. Muddle the mixture with the back of a spoon or pestle until the leaves darken in color (it’s okay if the leaves tear).
If you’d like to rim the glasses with sugar, sprinkle some granulated sugar on a plate. Run a wet paper towel or lime wedge around the edges of 2 collins glasses to dampen. Invert each glass into the sugar, turning it as needed, to coat the rim.
Blend 4 ounces coconut cream, 2 ounces white rum, and 2 ounces coconut rum in a blender until smooth and fluffy, about 30 seconds.
Fill the glasses with ice. Divide the lime and mint mixture and then the coconut mixture between the glasses. Stir until combined. Top each glass with 2 ounces seltzer water. Garnish each mojito with 1 mint sprig and 1 teaspoon pomegranate seeds.
