Q: In an effort to lose weight in college, I started eating a lot more fruits and vegetables. Now I am back at home and cooking for my Nigerian mom.
I still love incorporating loads of veggies into my meals or making them my entree, but the traditional Nigerian palate lends itself much more closely to meat-focused meals with rice as a starch. I can feel our food styles conflicting and would love recipes that embrace the "eran" for mom, but have variations or swaps that could be made more veggie heavy for me.
