What I Cook: Caroline’s “Secret Ingredient” Guacamole
Caroline grew up in Kenya and England, but she moved to Santa Barbara over a decade ago and put roots down in the Golden State of California. As a true naturalized Californian, whenever she goes back to Kenya for family gatherings, her most requested dish now is her stellar guacamole.
Can you guess what her secret ingredient is, one that makes this beloved dip even smoother than usual?
The secret ingredient is a dollop of mayonnaise!
If you don’t like mayonnaise or are vegan, you can use vegannaise. Caroline used the latter; she likes to use either, depending on what she has on hand. (You can find two recipes for this here.)
Caroline prepares a pretty traditional guacamole with four avocados, lime juice, tomato, onion, cilantro, and garlic, then mixes in that heaping tablespoon of mayonnaise and a touch of Tabasco.
There is a subtle smoothness that is insanely addictive — I’ve tried my guacamole this way and would not go back. Although I’m a pretty adamant hater of mayonnaise, in this application the effect is truly greater than the sum of its parts. Thanks Caroline!
