Editor: Changing up the tea you use to make the kombucha can be a fun way to play with the flavor — just stay away from herbal teas (the scoby needs real Camellia sinensis to stay healthy) and any teas with essential oils (which can cause mold growth on the scoby). Once you remove the scoby and are ready to bottle the kombucha, adding fruit is another great way to flavor your kombucha!
