Q: I received a package of chipped beef in my CSA this week. I've heard of creamed chipped beef, which is usually served on toast, but I have no idea what else I can do with this beef. Any suggestions?

Editor: Although I don't have any personal experience with it, I know that chipped beef brings up some nostalgic affection for some. If you aren't in the know, chipped beef is salted, dry beef that's cut into thin slices. Its most famous use is in creamed chipped beef, a dish of shaved beef and cream sauce — often a bechamel — served on toast. I can't say I have enough/any experience with it to give you recommendations on how to use it, but I'm betting our readers could give you some suggestions.
