Q: I'm due to give birth in the next couple of weeks, and I am so looking forward to eating all the different soft cheeses again. Aside from eating it straight (which is quite appealing), what would you recommend for a first "welcome back to my diet" recipe?

Editor: First, congratulations to you! As a fellow cheese lover, I can only imagine your excitement at the prospect of eating soft cheeses again. While eating soft cheese with cracker or a good baguette is always nice, there are also a lot of great ways to cook with it. Here are a few recipes I hope you enjoy:
- Gnocchi Skillet with Sweet Potatoes, Greens & Goat Cheese
- Mushroom-Asparagus Frittata (with your favorite soft cheese)
- Brie-Style Mac and Cheese with Mushrooms
Kitchn readers, do you have any favorite recipes that use soft cheeses?
