Chunks of watermelon play so well with arugula and feta cheese that all you need to tie it together is some freshly squeezed lemon juice and olive oil. Watermelon Arugula Salad

Ingredients

  • 3 tablespoons

    olive oil

  • Finely grated zest of 1 medium lemon

  • Juice of 1 medium lemon

  • Kosher salt

  • Freshly ground black pepper

  • 5 ounces

    arugula (about 5 packed cups)

  • 2 cups

    (1-inch) watermelon cubes

  • 4 ounces

    feta cheese, crumbled (about 1 cup)

Instructions

  1. Whisk the olive oil, lemon zest, lemon juice, a pinch of salt, and a few grinds of black pepper together in a large bowl. Add the arugula and watermelon and toss to combine. Add the feta and mint and toss again lightly.
