This week we are talking about "stone soups" — surprisingly tasty, satisfying soups that makes the most of a handful of unpromising ingredients — and asking some of our favorite food writers for their go-to recipes. Today, Catherine McCord of Weelicious shares the comforting, veggie-packed soup that she and her daughter are happy to eat for days on end.

What is your favorite kid-friendly "stone soup" to make?

My Spiced Carrot Cauliflower Soup.

What makes this soup so special?

Most people wouldn't think that blending up two seemingly unexciting ingredients would give you a warm and comforting soup that is bursting with flavor in every bite. Whenever I make this soup, my daughter Chloe and I eat it for days in a row! I often make several batches at a time.

What is your best piece of advice for making a great soup?

Let it simmer! When you let soup simmer, all the ingredients and flavors have time to join together and the soup just becomes more and more flavorful.
