This recipe combines seasoning, some breadcrumbs, quinoa, and cauliflower. It's blended together with some egg to bind and made into balls. The meatless balls are seared in a pan to give them a crispy, golden exterior, and the next thing you know you have dinner in 30 minutes flat. The blogger Pinch of Yum serves them in her "life-changing" masala sauce over rice with some leafy greens on the side.
These veggie balls would freeze well in large batches for last-minute meals. Just make sure to thaw in the refrigerator and pop them back in an oven to crisp up before adding to whatever sauce you have on hand.
