You Can Make These Vegetarian Meatballs in 30 Minutes

Today, we’re tackling vegetarian meatballs. Instead of the usually bean-filled ball, these meatless meatballs are made with cauliflower and quinoa. And they come together in just 30 minutes. Your weeknight dinner is served.
This recipe combines seasoning, some breadcrumbs, quinoa, and cauliflower. It’s blended together with some egg to bind and made into balls. The meatless balls are seared in a pan to give them a crispy, golden exterior, and the next thing you know you have dinner in 30 minutes flat. The blogger Pinch of Yum serves them in her “life-changing” masala sauce over rice with some leafy greens on the side.
These veggie balls would freeze well in large batches for last-minute meals. Just make sure to thaw in the refrigerator and pop them back in an oven to crisp up before adding to whatever sauce you have on hand.
