This Vegan Kale and Mango Salad Features the Creamiest Dressing Out There
Confession: I’m a former salad hater. For years, I never understood why someone would choose to eat a bowl of cold lettuce. And since there’s only so much ranch dressing and croutons you can add before a salad is no longer considered a “salad,” I figured you might as well eat a burger at that point.
Thankfully, I’ve since come to my senses find myself enjoying salads with yummy dressings that are a delicious mixture of both textures and flavors. So, when I recently saw a recipe Reel for a Vegan Mango Mama Salad on the (aptly named) Instagram account @veganrecipesideas, my first though was that it looks like just the type of salad that even a salad hater would love. It is described as a “life-changing salad,” after all.
To make it, add chopped kale, fresh mango, cucumber, red onion, steamed corn, avocado, and red bell pepper to a big bowl. Next, make the creamy green dressing by adding cilantro, lime juice, avocado oil, water, cashews, salt, and garlic to a blender. Blend until smooth, then pour the dressing over the chopped ingredients and toss everything together with a spoon. “The combination of the creamy dressing with the crunchy fresh salad is next-level,” the voiceover says.
