Get Your Fiber in the Sweetest Way with These Delicious Vegan Chickpea Blondies
Growing up, I was a very picky eater. Making a better-for-you dinner that you’d like me to try? Good luck. My pickiness even extended to snacks and sweets, too. If it wasn’t what I was used to, I wasn’t interested in having it. Thankfully, I grew older and matured, and so did my palate.
These days, I’m game for just about anything, but I’d be lying if I said I didn’t still have a slight bias towards vegan versions of my favorite treats. That’s where Carleigh Bodrug aka PlantYou on Instagram and her Vegan Chickpea Blondies come in. And honestly, I think they may have just pushed me over the edge to #teamvegan.
Simple to make and looking oh-so-delicious, Bodrug describes these blondies as “sneaky” because you would never guess that this is protein-based and and made with fiber-packed chickpeas.
To start, combine 1 1/2 cups of chickpeas, a half-cup of peanut butter, maple syrup, oats, a single tablespoon of water, three Medjool dates, baking powder, and a bit of vanilla extract in a high-speed blender and mix until smooth. Then, mix in both a half-cup of chocolate chips and fresh raspberries, and mix until combined. Transfer the mixture into a baking dish and add to a 400°F preheated oven for about 25 minutes or until cooked through. Once removed, let cool, and dig in!
