Veg Out with This Curried Cauliflower Rice & Chickpea Sauté
Rice is a glorious ingredient. Whether you’re eating sushi, fried rice, or risotto, nothing can compare to it. So when we share a recipe for cauliflower rice, we’re not trying to pull one over on you — we’re just trying to help you sneak a few more veggies into dinner!
You can buy cauliflower rice in bags now at many grocery stores, or if you have a head of cauliflower in the fridge, you can pulse it in your food processor to make your own “rice” at home. This recipe takes raw cauliflower rice (which might be a bit off-putting to some) and transforms it into a warm, comforting dish.
First you have to sauté onion, garlic, and ginger and spices like cumin, coriander, and curry powder in some coconut oil. Then add the cauliflower, cooked chickpeas, vegetable stock, and raisins. After the cauliflower has softened a bit, you stir in some greens (baby kale or spinach would be perfect!) and coconut milk.
Then comes the fun part: garnishing the bowls! Serve this veggie-packed dish with some plain yogurt, scallions, cilantro, and toasted cashews for a hearty, satisfying meal.
