French toast is a breakfast staple, but it requires either standing over a hot stove or turning on your oven — two activities I try to avoid in the sweltering summer heat. Luckily there’s an appliance that makes French toast possible for brunch all summer long: your microwave.

This recipe actually makes four French toast servings, so it’s perfect for weekend brunches with family or friends.

The best part about individual portions, in my opinion, is that everyone gets to choose their own toppings. The author suggests mini chocolate chips, dried tart cherries, raisins, or chopped pecans, but you can use whatever your heart desires here. Whatever you do, don’t forget the powdered sugar and maple syrup!
